A base of McLaren Vale Chenin Blanc, selected for its palate weight, complex herbal characters and ripe stonefruit flavours is the canvas for our dry Vermouth. After ageing in a combination of old oak and stainless steel with our special blend of Torino inspired roots, herbs and spices, we introduce our Australian signature to this classic style through a selection of native botanicals. Coastal rosemary and native thyme enhance the savoury green herbal characters, while karkalla adds a slightly salty flavour. The stonefruit and citrus notes of the Chenin Blanc are rounded out with the rich undertones of honey and toasted nuts from roasted wattleseed. The result is a dry and herbaceous Vermouth, with ripe mid palate fruit and a deliciously salty finish.
