Jon and Sarah Lark have led the way in establishing a dedicated small gin distillery in 2002 long before the rapid rise of boutique distilleries now spread around the country over the last decade.
Kangaroo Island was a natural choice to establish their distillery. They really liked the passion of the producers who were already on the Island. They weren’t big people trying to market something that isn’t real. Kangaroo Island is the place for genuine artisan, craft and handmade products. It is a place of passionate hard workers when it comes to innovation and effort. Add the beauty of the Island, and you have a really lovely place to engage with.
Jon and Sarah believe gin should be predominantly juniper flavoured however the Kangaroo Island Spirits point of difference is their use of botanicals to create some of the most sensational gins you’ll ever taste.
The reality is that you have to be hands on in every step of distilling to produce a “crafted” spirit.
